Yes, you can have your morning coffee and smoothie all in one delicious drink. Made with cold brewed coffee that you prepare the night before for easy preparation. Amazing any day, but we can’t think of anything better to make a Monday morning more civilized.

Coffee Smoothie or Mocha Almond Smoothie

You can sweeten this with a little maple syrup if desired. For even better tasting brew, use filtered water. Boost your smoothing by adding a small scoop of quick rolled oats, chia seeds, hemp seeds or flax seeds before blending.

Ingredients

Cold Brewed Coffee:

  • ⅔ cup coarse-ground coffee or espresso
  • 1 ½ cups cold water or filtered water

Coffee Smoothie:

  • ½ cup almond milk
  • 2 large bananas, frozen
  • 2 Medjool dates, pitted and finely chopped
  • 2 tbsp cocoa powder
  • 2 tbsp smooth almond butter
  • ¼ tsp ground cinnamon
  • Tiny pinch sea salt
  • 4 ice cubes
  • ¼ cup Greek yogurt or dairy free topping (optional)
  • Grated dark chocolate (optional)

Preparation

Cold Brewed Coffee:

Add ground coffee to 2 cup jar. Pour over cold water; stir to combine. Cover and seal; refrigerate overnight, about 10 to 12 hours. Strain through fine-meshed sieve and then again through coffee filter. Makes about 1 cup strong-brewed coffee.

Smoothie:

In blender, mix together cold brewed coffee, almond milk, bananas, ice, dates, almond butter, cocoa powder, cinnamon and salt until smooth. Pour into 2 tall glasses. Garnish with dollop of Greek yogurt or dairy free topping and chocolate, if using.

Servings: Makes 2 servings
