How to make cheese latkes for Hanukkah
In honour of Hanukkah, All in a Day has invited a D is for Dinner guest to share her recipe for a special cheese latke.

In honour of Hanukkah, Boyarsky is a guest on All in a Day to share her recipe for a special cheese latke.
Throughout the year, The Boyarskys are known for opening their home on Friday nights to Jewish university students. Depending on the week, that means sitting down to Shabbat dinner with 20, 30, 40 or more guests.
Cheese latkes
Ingredients:
- 3 eggs.
- 1 cup milk.
- 1 cup cottage cheese, drained.
- 1 1/2 cups flour.
- 1 tsp. baking powder.
- 1/2 tsp. salt.
- 5 tbsp. sugar.
- 1 tsp. vanilla extract.
- 1/2 cup oil for frying.
Directions:
- Place all the ingredients except oil together in a large bowl. Mix until smooth.
- Heat oil in a skillet. Using a large spoon, drop the batter into hot oil. Fry 2-3 minutes on each side until lightly browned.
- Continue until batter is used up, adding oil when necessary.
- The latkes taste great topped with sour cream, applesauce, or maple syrup.
