How to make cheese latkes for Hanukkah

In honour of Hanukkah, All in a Day has invited a D is for Dinner guest to share her recipe for a special cheese latke.
For this batch of cheese latkes, Yocheved Boyarsky made them on a griddle rather than frying them in oil, so they came out looking slightly different than they would if the recipe were followed exactly. (Yocheved Boyarsky)

Yocheved Boyarsky is co-director of the Rohr Chabad Student Network which offers a handful of programs and services to Jewish students in Ottawa who want to explore and practice their faith.

In honour of Hanukkah, Boyarsky is a guest on All in a Day to share her recipe for a special cheese latke.

Throughout the year, The Boyarskys are known for opening their home on Friday nights to Jewish university students. Depending on the week, that means sitting down to Shabbat dinner with 20, 30, 40 or more guests.

Cheese latkes

Ingredients:

  • 3 eggs.
  • 1 cup milk.
  • 1 cup cottage cheese, drained.
  • 1 1/2 cups flour.
  • 1 tsp. baking powder.
  • 1/2 tsp. salt.
  • 5 tbsp. sugar.
  • 1 tsp. vanilla extract.
  • 1/2 cup oil for frying.

Directions:

  1. Place all the ingredients except oil together in a large bowl. Mix until smooth.
  2. Heat oil in a skillet. Using a large spoon, drop the batter into hot oil. Fry 2-3 minutes on each side until lightly browned.
  3. Continue until batter is used up, adding oil when necessary.
  4. The latkes taste great topped with sour cream, applesauce, or maple syrup.
